For the Dough:

  • 3/4 cup brown sugar
  • 2/4 cup softened butter
  • 2 tbsp ground cinnamon

For the Cream Cheese Glaze:

  • 4 oz softened cream cheese
  • 2 tbsp melted butter
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • 1 cup powdered sugar


  1. Make the dough: In a large bowl, whisk together the warm milk, sugar, and melted butter. Ensure the mixture is just warm, between 100-110˚F (37-43˚C). Sprinkle the yeast evenly over the milk mixture, stir, and let it sit in a warm place for about 10 minutes until the yeast has bloomed.
  2. Add 4 cups (500 g) of flour to the milk mixture and stir until just combined. Cover the bowl and let the dough rise in a warm place for 1 hour, until nearly doubled in size.
  3. Generously butter 2 9-inch (23 cm) round baking pans and set aside.
  4. Make the filling: In a medium bowl, combine the brown sugar, softened butter, and ground cinnamon. Mix well and set aside.
  5. Remove the plastic wrap from the dough and add the remaining cup of flour, baking powder, and salt. Stir well and turn out onto a clean surface. Knead the dough for at least 10 minutes, adding more flour as necessary, until smooth and springy.
  6. Roll out the dough into a large rectangle, about 1/2-inch (1 cm) thick. Spread the filling evenly over the dough.
  7. Starting from one short end, roll up the dough into a log and pinch the seam closed. Trim any uneven ends.
  8. Using unflavored dental floss, cut the log into evenly sized pieces, about 1 1/2 inches (8 cm) thick. Place the cinnamon rolls in the prepared pans, cover with a towel, and let rise in a warm place for 35-45 minutes.
  9. Preheat the oven to 350˚F (180˚C). Bake the cinnamon rolls for 25-30 minutes, until golden brown.
  10. While the cinnamon rolls are baking, make the cream cheese glaze: In a medium bowl, whisk together the softened cream cheese, melted butter, milk, and vanilla extract until smooth. Gradually add the powdered sugar and whisk until smooth and runny.
  11. When the cinnamon rolls are finished baking, let them cool for about 10 minutes.
  12. Drizzle the cream cheese glaze over the warm cinnamon rolls and spread using the back of a spoon if desired.
