Ingredients:
- 2 cups all-purpose flour
- 1 cup 100% Brewer’s Barley Saved Grain Flour
- 1/2 teaspoon dry active yeast
- 1 1/2 cups warm water
- Cheese of your choice (cheddar, mozzarella, parmesan, etc.), shredded
- Fresh or dried herbs (rosemary, thyme, basil, oregano, etc.), finely chopped
- Salt to taste (optional)
Instructions:
- Prepare the Dough:
- In a large mixing bowl, combine the all-purpose flour, whole wheat flour, and dry active yeast.
- Gradually pour in the warm water while stirring continuously until a shaggy dough forms.
- Mix until all the ingredients are well combined and there are no dry patches. The dough will be sticky.
- Rise:
- Cover the bowl with plastic wrap or a clean kitchen towel.
- Allow the dough to rise at room temperature for 3 to 5 hours, or until it has doubled in size and bubbles appear on the surface.
- Shape the Bread:
- Preheat your oven to 400°F (200°C). Place a Dutch oven or baking dish in the oven to preheat as well.
- Lightly dust your work surface with flour and transfer the risen dough onto it.
- Gently pat the dough into a rectangle or oval shape, about 1 inch thick.
- Add Cheese and Herbs:
- Sprinkle a generous amount of shredded cheese and chopped herbs evenly over the surface of the dough.
- Press the cheese and herbs lightly into the dough to help them adhere.
- Bake:
- Carefully remove the preheated Dutch oven or baking dish from the oven.
- Transfer the prepared dough into the hot dish.
