Brewer's Barely and Coffee Flour - Burger Buns

Here's the recipe for Burger Buns:

 

Ingredients:

  • 150 grams 100% Brewer’s Barley Saved Grain Flour
  • 50 grams Gluten-free coffee flour
  • 200 grams All-Purpose Flour
  • 300 grams Lukewarm Milk (about 1 and 1/4 cup)
  • 14 grams Canola Oil (1 tablespoon)
  • 1 Large Egg
  • 21 grams Honey (1 tablespoon)
  • 9 grams Kosher Salt (1 and a half teaspoons)
  • 7 grams Active Dry Yeast (1 packet or 2 and 1/4 teaspoons)
  • Egg Wash (1 egg whisked with 1 tablespoon of water)
  • Sesame Seeds (for sprinkling)

Instructions:

  1. Activate the yeast: In a large mixing bowl, combine the lukewarm milk, honey, and active dry yeast. Let the mixture sit for about 5-10 minutes, or until the yeast becomes foamy and activated.
  2. Add wet ingredients: Once the yeast is activated, add the canola oil and the large egg to the bowl. Whisk the ingredients together until well combined.
  3. Incorporate dry ingredients: Gradually add the whole wheat flour, coffee flour, all-purpose flour, and kosher salt to the wet ingredients. Mix until a soft dough forms.
  4. Knead the dough: Transfer the dough to a lightly floured surface and knead it for about 5 minutes, or until it becomes smooth and elastic. You can also use a stand mixer fitted with a dough hook attachment for this step.
  5. First rise: Place the kneaded dough in a lightly oiled bowl, cover it with plastic wrap, and let it rise at room temperature for 1-2 hours, or until it doubles in size.
  6. Shape the buns: Once the dough has doubled in size, gently punch it down and transfer it to a floured surface. Divide the dough into 8 equal pieces and shape each piece into a ball. Place the shaped buns on a lined baking sheet, seam side down.
  7. Second rise: Cover the shaped buns with a clean kitchen towel and let them rise for another hour, or until they are puffed up and slightly increased in size.
  8. Preheat the oven: Preheat your oven to 375°F (190°C). Brush the tops of the risen buns with the egg wash and sprinkle them with sesame seeds for added flavor and texture.
  9. Bake the buns: Place the baking sheet in the preheated oven and bake the buns for 15-18 minutes, or until they are golden brown and sound hollow when tapped on the bottom.
