Here's the recipe for Burger Buns:
Ingredients:
- 150 grams 100% Brewer’s Barley Saved Grain Flour
- 50 grams Gluten-free coffee flour
- 200 grams All-Purpose Flour
- 300 grams Lukewarm Milk (about 1 and 1/4 cup)
- 14 grams Canola Oil (1 tablespoon)
- 1 Large Egg
- 21 grams Honey (1 tablespoon)
- 9 grams Kosher Salt (1 and a half teaspoons)
- 7 grams Active Dry Yeast (1 packet or 2 and 1/4 teaspoons)
- Egg Wash (1 egg whisked with 1 tablespoon of water)
- Sesame Seeds (for sprinkling)
Instructions:
- Activate the yeast: In a large mixing bowl, combine the lukewarm milk, honey, and active dry yeast. Let the mixture sit for about 5-10 minutes, or until the yeast becomes foamy and activated.
- Add wet ingredients: Once the yeast is activated, add the canola oil and the large egg to the bowl. Whisk the ingredients together until well combined.
- Incorporate dry ingredients: Gradually add the whole wheat flour, coffee flour, all-purpose flour, and kosher salt to the wet ingredients. Mix until a soft dough forms.
- Knead the dough: Transfer the dough to a lightly floured surface and knead it for about 5 minutes, or until it becomes smooth and elastic. You can also use a stand mixer fitted with a dough hook attachment for this step.
- First rise: Place the kneaded dough in a lightly oiled bowl, cover it with plastic wrap, and let it rise at room temperature for 1-2 hours, or until it doubles in size.
- Shape the buns: Once the dough has doubled in size, gently punch it down and transfer it to a floured surface. Divide the dough into 8 equal pieces and shape each piece into a ball. Place the shaped buns on a lined baking sheet, seam side down.
- Second rise: Cover the shaped buns with a clean kitchen towel and let them rise for another hour, or until they are puffed up and slightly increased in size.
- Preheat the oven: Preheat your oven to 375°F (190°C). Brush the tops of the risen buns with the egg wash and sprinkle them with sesame seeds for added flavor and texture.
- Bake the buns: Place the baking sheet in the preheated oven and bake the buns for 15-18 minutes, or until they are golden brown and sound hollow when tapped on the bottom.
- Cool and serve: Remove the baked buns from the oven and let them cool on a wire rack before slicing and serving. These Homemade Whole Wheat Coffee Burger Buns are perfect for serving with your favorite burgers or sandwiches.
